Try sauteíng them in some coconut oil with onion, turmeric, and ginger, then blending that up with a little coconut milk for a quick and easy soup that’s delicious eaten chilled on a hot summer day.
YELLOW: Think beyond just green peppers—yellow ones are equally versatile and a great source of vitamin C, one of nature’s most powerful antioxidants. Next time you’re grilling throw a few whole ones on the grill until they’re charred, then peel off the skin. Chop them up and mix with cherry tomatoes, basil, olive oil, salt and pepper, and serve on top of toasted bread for an unexpected twist on classic bruschetta.
GREEN: It’s not just fruits and veggies that are your best source of antioxidants. Green tea is incredibly rich in antioxidants, and is also a great source of polyphenols, molecules that have hydrating and anti-inflammatory benefits. (We’ll drink to that.) Brew a big batch, add a little bit of lemon and honey, then chill in the fridge for an ultra-refreshing beverage.
BLUE: Tiny but mighty, blueberries are another great source of vitamin C and also contain some vitamin E, not to mention are a good source of fiber, too. Make them a breakfast staple by blending them into a smoothie, or use them as a topping for a chia bowl. (Bonus: Chia seeds also contain antioxidants.).
PURPLE: If cabbage isn’t a part of your regular veggie rotation, it should be—especially the purple kind, which has more antioxidants than other varieties, specifically vitamins A and C. Slice it up and toss with shredded carrots, a spoonful of Greek yogurt, and a splash of apple cider vinegar for a healthier take on coleslaw that will be the perfect side dish for any summer barbecue.
